The very best craftmanship you will ever encounter is always the work of some person who doesn't charge enough, and then they decide to go spend some time in the woods and you can never find them again.@futurebird the best Japanese food I ever had was in an Izakaya restaurant where this very eccentric chef worked and refused paycheck, but had free room & board, and insisted on doing anything he wanted. We were getting Michelin star type Japanese food for regular prices. I knew it was so special & often chatted with him at the sushi bar. I went as often as I could afford. When he left, they just couldn’t make it the same. I miss it often!
